Winter Greens with Carrots, Feta Cheese and Brown Rice

We've been trying out some cool recipes from the "Whole Deal", Whole Foods buying guide full of recipes and lots of coupons. I thought you could only get these in-store, but the online version is exactly the same, along with a link for the coupons.









Winter greens with carrots, feta cheese and brown rice - such a delicious and quick recipe! We've made this twice so far, the first time with brown rice and more recently with quinoa.


From the Whole Foods Whole Deal Recipe:

Ingredients

2 carrots, shredded
2 bunches dark leafy greens (kale, collard greens or Swiss chard), tough stems removed, leaves very thinly sliced
1/2 red onion, finely chopped
Salt and ground black pepper to taste
1/4 pound feta cheese, crumbled
1 (20-ounce) package 365 Everyday Value frozen Organic Whole Grain Brown Rice, prepared according to package directions

Method

Put carrots, greens, onions, 1/4 cup water, salt and pepper into a large, deep skillet and toss well. Cover and cook over medium heat, tossing once or twice, until greens are wilted and tender, 10 to 15 minutes. Toss with feta cheese and spoon over brown rice.

Really simple and delicious! This was a great lunch meal during the work/school week. I also loved it because it was so quick and easy to make.

P.S.: If you like feta cheese, you may want to add a little extra ;) - Ken

  2. So darned good! Ours wasn't as pretty as yours, but was a wonderful dinner with a tomato salad. My
    "honey" had it with apple sauce.

  3. I agree with my honey, Ted, that it was yummy! What he didn't say was that we had a few Tim's potato chips on the side. :)
    Also, when I started chopping the greens, I couldn't believe the recipe was really calling for 2 (TWO!) bunches of greens, so I only put one in. Mistake. It was good, but the greens cook WAY down, so yes, they really mean two whole bunches of greens. The potato chips are optional. Oh, one more thing, we cut up and sauteed some Applegate chicken and turkey sausage and sprinkled them on top. Thanks again you two! Anne

    Yes, 2 bunches believe it or not! "Tim's Chips" and chicken/turkey sausage are excellent additions to the meal :)

    Delicious! We made it without the cheese and served it with brown rice and chicken tonight. Very yummy and enough for leftovers, too. Thanks for the recipe and all your inspiring food ideas!
